Potato Sauce

 

Potato sauce is a term used to refer to a sauce prepared with potatoes as a base ingredient or sometimes this term is for a sauce which is served with potato based dishes. Potato sauce makes a tasty side dish with pastas, noodles, roasted meat or fish. It is cooked with potatoes, spices, herbs, a little oil and salt. White potatoes are used in the preparation of sauce, but sometimes sweet potatoes are also used as a base ingredient.

 

Potato Based Sauces

 

  • Skordalia - Skordalia or skorthalia is a popular Greek potato sauce prepared using potatoes, garlic, lemons, olive oil, potato stock and table salt. A sauce prepared with potato is usually teamed with grilled fish and vegetables, poached vegetables and boiled vegetables. This sauce is sometimes used as a dip.   

    Ingredients - Potatoes, lemon juice, garlic buttons, olive oil, table salt and potato stock are used in the preparation of sauce.

    Method of Preparation – The sauce preparation begins by boiling potatoes in water. The garlic buttons are pulsed in food processor along with salt. Boiled potatoes are then chopped and mixed with olive oil, potato stock, and lemon juice. The potatoes are pulsed in blender until they turn smooth and creamy. The seasoning of the sauce is adjusted by adding salt or lemon juice before serving.

    Variations - Many variations of this sauce can be observed in different parts of Greece. In some parts vinegar is added, in Athens potato stock is replaced with sour cream, and in Corfu potato stock is replaced with plain yogurt. In some places the potatoes are altogether replaced with stale bread soaked in milk.

     
  • Potato Cream Sauce – This is also one of the popular types of potato sauces commonly found in most of the cuisines across the world. There is no fixed recipe for making this sauce.  The choice of ingredients purely depend on the individuals taste preferences.

    Ingredients - Potatoes, water, butter flavored granules; onion powder, chicken bouillon granules, evaporated skimmed milk and pepper are used in the preparation of this sauce.

    Method of Preparation - The potatoes are boiled in salty water and blended in electric mixer until it turns smooth in texture. Milk is stirred into the mixture along with other ingredients.

    Culinary Usage – This sauce can be used as a base for various other casseroles, creamy soups and scalloped potato dishes.
     

 

Dipping Sauces for Potato Based Dishes
 

  • Baked Potato Sauce – This dip sauce recipe was devised by Paula Deen. This sauce is served with baked potatoes.

    Ingredients – Sour cream, mayonnaise, salt and pepper, and chopped yellow onions are used in the preparation of sauce.

    Method of Preparation – All the ingredients are combined together, covered and refrigerated together for a long time before being served with a baked potato.
