Pineapple Sauce

 

Pineapple sauce is a sweet sauce prepared using pineapple as a base ingredient and this sauce is treated as a condiment. The sauce has immense culinary value because sometimes it is used as a topping for ice creams and puddings, or it is used as glaze for meats or it is served as a dip for pancakes.   • Ingredients like sugar, cornstarch, salt, pineapple juice, lemon juice and crushed pineapple are required to make the sauce.
  • Method of Preparation - Sugar, cornstarch and salt are combined together in a saucepan and then pineapple juice is also added to it. The whole mixture is boiled and cooked for a couple of minutes. Lemon juice and pineapple are added to the mixture once it is removed from the heat.

  • Pineapple Glaze – A kind of sweet sauce used for marinating meat. This sauce is usually brushed over the meats like ham, chicken, pork, and white fish. Sometimes pineapple spears are added to the sauce while brushing them. Fresh, canned or whole fruit is used in the preparation of glaze. Pineapple syrup is used for an added flavor while using canned fruit for making the sauce. Pineapple syrup when used is combined with dissolved cornstarch and water before adding to the sauce. A very popular type of glazing sauce is prepared by combining pineapple pieces with rum, brown sugar, Worcestershire sauce, mustard, and ginger. Such sweet and tangy combination always helps to bring out best flavor in the meats. Pineapple glaze can be prepared ahead of the cooking time and used as a marinade. Meats like chicken are typically soaked upto 4 hours before broiling and for pork chops and ham it requires 8 hours.   • Pineapple Orange Sauce – This sauce is used for marinating lamb, fishes and chicken. Other than pineapple and oranges, this sauce contains ingredients like toasted pecans, coconut, ginger or some walnuts. In Caribbean nations sweet-savory variation of this sauce is created by combining pineapple and oranges with ingredients like lime juice, onion and cilantro. This sauce is sweetened by the addition of honey and sometimes chili pepper like jalapeno is added to increase its hotness.

 

  • Pineapple Peanut Butter Marinade – This sauce is considered good for marinating chicken which is either skewered or grilled in pieces. Crushed pineapples are combined with ginger, curry powder and lime juice to make this sauce. Smooth peanut butter is added towards the end of cooking to enrich the flavor and bulk of the sauce. Brown sugar imparts sweet and sour flavor to this sauce.

 

  • Pineapple Chutney – A very popular type of sauce prepared using pineapple. This sauce is used as a condiment and is served with jerked meats like pork chops or grilled meats. The pineapple chutney can be prepared sweet or spicy depending on the requirement of the recipe. Fresh or canned fruit is used and sometimes juice is also included in the dish. Onion, white or cider vinegar, and brown sugar are some of the ingredients used in the preparation of sauce.  The sauce is seasoned with salt and pepper. Some complex pineapple chutneys are prepared with 14 types of ingredients. Sometimes ingredients like ginger, cumin, and allspice are also added to the chutney to improve its flavors.
