Brandy Sauce

 

Brandy sauce is prepared using brandy as a flavoring ingredient which is generally served over Christmas puddings.  Rum sauce and brandy sauce belong to a category of hard sauces which are generally prepared using butter, alcohol (rum or brandy) and sugar and both these sauces are served as accompaniment for desserts.

 

 

 

Ingredients and Preparation

  • Ingredients – Butter, plain flour, milk, caster sugar, and brandy are needed to make this sauce.
  • Method of Preparation – The sauce preparation begins by cooking flour with  melted butter and gradually milk is added to the mixture. It is cooked until it thickens before adding other ingredients like sugar and brandy. Sometimes sugar is cooked together with flour and milk.  
  • Serving – The brandy sauce is generally served over Christmas puddings.

 

 

Brandy Sauce Recipe Variations

 

  • Brandy Cream Sauce – This sauce is served over grilled steaks. It is prepared using ingredients like brandy, chicken broth, green onion, or shallots, whipping cream, unsalted butter, lemon juice, and white pepper.
     

 

  • Brandy and Mushroom Cream Sauce – This rich gourmet sauce is usually served over grilled steaks, pork chops or chicken. It is prepared with butter, garlic cloves, spring onions, button mushrooms, brandy and cream.

     
  • Apple Brandy Sauce – This is a popular dessert sauce which is served warm over bread pudding. This sauce is prepared using ingredients like sugar, brown sugar, heavy whipping cream, corn syrup, salt, Apple Schnapps or apple brandy and vanilla essence.


     
  • Brandy Apricot Sauce – This is a popular gourmet sauce which is  used as a dessert sauce and is also teamed with savory dishes. Apricot preserves, water and brandy are required to make this sauce.


     
  • Brandy Butter Sauce – This is a traditional sauce which is served over plum pudding. This sauce also teamed with hot raisin toast. Brandy butter sauce is prepared by  blending unsalted butter, confectioners’ sugar, orange zest, orange juice and brandy together in a food processor and refrigerated before serving..

    The sauce is usually served at room temperature.
