Apricot Sauce

 

Apricot sauce, this term applies to any sauce which is prepared using cooked, fresh, or frozen apricots, or apricot based condiments like marmalades ,jams and juices.

 

Features of the Sauce
The apricot sauce may be sweet, tart or spicy depending on its usage. The tangy and sweet flavor of apricot is enriched by cooking it with ingredients like brown sugar, soy sauce, ginger, tomatoes, and wine. The spiciness is enhanced by addition of rosemary or tarragon. Many recipes specify the form of apricot used in sauce preparations which may include apricot juice, apricot jam or marmalade. For making a chunky sauce, frozen or canned apricots are preferred. In some recipes, apricot marmalade is substituted in place of fresh apricots to cut down the cooking time. Most of the apricot sauce recipes emphasize more on the flavor than on the form of apricot.

It is prepared by cooking fresh apricots with ginger or apricot marmalade with ginger and red wine. The sauce is cooked over low heat to improve the flavor of sauce. Apricot sauce is mostly served with pork tenderloin. It is served over the pork or is served along with it as a dipping sauce. Sometimes it is used as a glazing sauce. During the preparatory phase, it is poured over the meat and baked. In some other recipes the apricots are added to the pan drippings along with other ingredients to make a sauce. Sometimes a glazing sauce is prepared by cooking fresh or frozen apricots with orange juice until a thick and syrupy liquid is obtained.

 

Sauces flavored with apricot are popularly served as fruit dips or creamy no-cook sauces. The fresh apricot or apricot marmalade is combined with heavy whipped cream and sour cream to form a sauce. Mostly the fruit dipping sauces containing apricot are served cold.
