Real Red Chili Sauce
|White vinegar||300 Milliliter (1 1/4 Cups)|
|Whole cloves||2 Teaspoon|
|Cinnamon stick||1 , broken|
|Celery seed||1 Teaspoon|
|Ripe tomatoes||22 Medium|
|White sugar||250 Milliliter (1 Cup)|
|Chopped onion||15 Milliliter (1 Tablespoon)|
|Cayenne pepper||1⁄2 Teaspoon|
|Salt||15 Milliliter (1 Tablespoon)|
Bring vinegar; cloves, cinnamon and celery seed to a boil and let stand off stove to absorb spices.
Scald and peel tomatoes and cut them up.
Combine half tomatoes with half cup of sugar, onion and cayenne in preserving kettle and boil 30 minutes, stirring constantly.
Then stir in remaining tomatoes and sugar and boil another 30 minutes.
Strain vinegar, discarding spices, and combine with tomato mixture, add ing salt.
Boil another 30 minutes, stirring as before.
Pour into hot sterlized jars and seal.
