Green Herb Dipping Sauce
|Italian parsley||1⁄2 Bunch (50 gm)|
|Fresh dill||1⁄2 Bunch (50 gm)|
|Watercress||1⁄2 Bunch (50 gm)|
|Cooked fresh spinach||3⁄4 Cup (12 tbs), drained (All Liquid Should Be Squeezed Out)|
|Scallions||2 , sliced thin (Green Onions, Tender Greens Are Also Included)|
|Mayonnaise||2 Cup (32 tbs) (Use Homemade Variety)|
|Dairy sour cream||1 Cup (16 tbs)|
|Ground black pepper||To Taste|
In a food processor fitted with a steel blade, place parsley, dill and watercress.
Chop fine and transfer to a bowl.
Process spinach in the same way and add to herb mixture.
Combine herbs with scallions, mayonnaise and sour cream, folding together gently.
Add salt and pepper to taste.
Refrigerate until ready to use
