Ragout With Piquant Sauce
|Canadian bacon slices||3⁄4 Pound, cut into strips|
|Beef round steak||1 1⁄2 Pound, cut into 3 x 0.25 inch strips|
|Onions||3 , thinly sliced|
|Potatoes||4 , pared and sliced|
|Carrots||8 , pared and sliced|
|Mayonnaise||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Lemon juice||1 Tablespoon|
|Cayenne pepper||To Taste|
Arrange bacon strips in an even layer on the bottom of a Dutch oven.
Cover with the beef strips.
Season to taste with salt, pepper, and monosodium glutamate.
Cover with a layer of onions, potatoes, and carrots, adding more seasoning after each layer.
Cover tightly and cook slowly 2 hours, or until vegetables are tender.
Meanwhile, blend the remaining ingredients in a bowl.
Cover and chill.
