Poached Cod With Lemon Sauce

Ingredients
  Cod fillets 1 1⁄2 Pound
  Lemon juice 1 Tablespoon
  Shallots 2 , peeled, chopped
  White wine 1⁄4 Cup (4 tbs)
  Butter/Margarine 1 Tablespoon
  Lemon sauce 1 Cup (16 tbs) (Adjust Quantity As Needed)
  Mayonnaise 3⁄4 Cup (12 tbs)
  Lemon 1⁄2 , juiced
  Dry mustard 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Capers 1⁄2 Tablespoon, drained, chopped
  Seasoned salt To Taste
  Pepper To Taste
Directions

Wash fish; pat dry.
Sprinkle with salt, pepper, and 1 tablespoon lemon juice.
Place in small, greased casserole dish.
Sprinkle with shallots; pour wine over all.
Dot with 1 tablespoon butter; cover.
Bake at 350°F 20 to 25 minutes, until fish flakes easily.
Meanwhile, melt 1 tablespoon butter in top of double boiler.
Add remaining sauce ingredients except capers.
Cook, stirring constantly, over simmering water until heated through.
Stir in capers.
Place fish on heated platter; top with sauce.
