Spicy Herb Tomato Sauce
|Olive oil||1⁄2 Cup (8 tbs)|
|Chopped yellow onions||2 Cup (32 tbs)|
|Ripe plum tomatoes/Meaty tomatoes||4 Pound, skinned|
|Canned tomato paste||6 Ounce|
|Basil||2 Tablespoon, minced|
|Dried oregano||1⁄2 Teaspoon|
|Ground black pepper||1 Tablespoon|
|Water||4 Cup (64 tbs)|
|Garlic||5 Clove (25 gm), peeled and sliced|
|Chopped italian parsley||1⁄2 Cup (8 tbs)|
Heat olive oil in a large deep pot.
Add onions and cook, covered, over low heat until tender and lightly colored, about 25 minutes.
Add tomatoes, tomato paste, basil, oregano, salt and pepper.
Simmer for 10 minutes, stirring occasionally.
Add the water and cook very slowly, uncovered, for 3 hours.
Stir in the garlic and parsley and simmer for another 5 minutes.
Taste and correct seasoning if necessary.
Use immediately, or cool to room temperature before covering.
Refrigerate or freeze.
