Sea Bream With Horseradish Sauce

Ingredients
  Sea bream fillet 4 (Porgy)
  Salt To Taste
  Pepper To Taste
  Fresh lemon juice 2 Tablespoon
  Butter 1⁄3 Cup (5.33 tbs)
  Egg yolks 3
  Wine vinegar 4 Tablespoon
  Sugar 1⁄2 Teaspoon
  Prepared horseradish 3 Teaspoon
Directions

Rinse the fish under plenty of cold running water.
Pat dry on kitchen paper and season with salt and pepper on both sides.
Arrange the fillets side by side in a rectangular dish and pour the lemon juice over.
Cover and microwave on HIGH for 5 minutes.
Put the butter into a large bowl and melt in the oven for 1 1/2 minutes on HIGH.
Put the egg yolks, vinegar and sugar into another bowl and whisk together.
Whisk into the butter.
Cook on HIGH for 30 seconds, whisk again, then cook a further 30 seconds.
Whisk once more, then add the horseradish, still whisking vigorously.
Drain the fish and divide each fillet in two.
