This Tomato Coulis is a delicious accompaniment for your vegetable dishes. I love it especially on a plate of grilled fish. You will love it. Dont miss out on this brilliant Tomato Coulis recipe!
Ingredients
  Ripe firm tomatoes 3 , peeled and seeded
  Salt 1⁄2 Teaspoon
  Ground black pepper To Taste
  Sugar 1⁄2 Teaspoon
  Chopped mint/Basil 1 Tablespoon
Directions

To peel and seed the tomatoes, drop them in a saucepan of boiling water for about 20 to 30 seconds.
Remove with a slotted spoon and use a sharp paring knife to peel away the skin.
Then, cut the peeled tomatos in half horizontally.
Place the rounded side in the palm of your hand and squeeze gently so the seeds fall out.
Process the tomatoes in a processor fitted with a steel chopping blade.
The puree can be very smooth or chunky, depending on the texture you want.
Add the salt, pepper, sugar, and mint or basil and taste to adjust seasonings, if necessary
