|Shallots||5 , finely chopped|
|Orange||1 , peeled and juiced, cut peel julienne|
|Lemon||1 , peeled and juiced, cut peel julienne|
|Currant jelly||1⁄2 Cup (8 tbs)|
|Port||1⁄2 Cup (8 tbs)|
|Dijon mustard||1 Teaspoon|
|Ground ginger||1 Pinch|
|Ground red pepper||1 Pinch|
Combine shallots, citrus peel and juice in small saucepan.
Place over low heat and simmer 10 minutes, stirring frequently.
Add remaining ingredients and simmer 10 minutes, stirring occasionally.
