Cumberland Sauce

The Cumberland Sauce is great with meat. The flavor of this wonderful Cumberland Sauce is irresistible. Try it for yourself!
Ingredients
  Shallots 5 , finely chopped
  Orange 1 , peeled and juiced, cut peel julienne
  Lemon 1 , peeled and juiced, cut peel julienne
  Currant jelly 1⁄2 Cup (8 tbs)
  Port 1⁄2 Cup (8 tbs)
  Dijon mustard 1 Teaspoon
  Ground ginger 1 Pinch
  Ground red pepper 1 Pinch
Directions

Combine shallots, citrus peel and juice in small saucepan.
Place over low heat and simmer 10 minutes, stirring frequently.
Add remaining ingredients and simmer 10 minutes, stirring occasionally.
