Monkf Ish In Garlic Sauce
|White of leek||4|
|White wine||3 Tablespoon|
|Monkfish fillets||2 Pound|
|Garlic||30 Clove (150 gm) (Young Variety)|
|Sour cream||4 Tablespoon (Crme Fraiche)|
Remove the base and the outer leaves of the leeks.
Cut in half lengthwise and then into dice.
Rinse thoroughly and leave to drain.
Put into a bowl with the white wine.
Cover and microwave on HIGH for 6 minutes.
Rinse the monkfish fillets under plenty of cold running water.
Pat dry on kitchen paper and cut into thick slices.
Peel and halve the young garlic cloves and remove the central green stem.
Arrange the slices of monkfish on top of the leeks.
Season with salt and pepper.
Cover and microwave on HIGH for 5 minutes.
Put the garlic cloves in a bowl with the butter.
Spoon the cooking liquid from the monkfish over.
Cover and microwave on HIGH for 10 minutes.
Blend the contents of the bowl with the sour cream (creme fraiche), salt and pepper.
Pour the sauce back into the bowl.
Reheat in the microwave oven on HIGH for 1 minutes.
