Whiting With Shallot Sauce

  Shallots 2 Ounce, finely chopped
  Dry white wine 2⁄3 Cup (10.67 tbs)
  Silver hake/Whiting 4 , cleaned
  Salt To Taste
  Pepper To Taste
  Fresh lemon juice 3 Tablespoon
  Butter 2 Teaspoon
  Sour cream 3 Tablespoon (creme fraiche)
  Chopped parsley 2 Tablespoon

Put the shallots in a bowl.
Pour the white wine over the shallots and cook in the microwave oven for 6 minutes on HIGH.
Rinse the fish under cold running water and pat dry on kitchen paper.
Season the insides of the fish with salt and pepper.
Make 2 or 3 deep incisions in the fleshiest part of the fish.
Sprinkle the base of a rectangular or oval dish with salt and pepper and arrange the fish on it, side by side and head-to-tail.
Pour the lemon juice over.
Dot with butter, cover and microwave on HIGH for 7 minutes.
Using two large spatulas, carefully transfer the fish to a serving dish.
Pour the cooking liquid into the bowl with the shallots and white wine.
Stir in the sour cream (creme fraiche) and reheat in the microwave oven on HIGH for 2 minutes.
Add the parsley and stir well.
Taste and adjust seasoning.
