Skate Wings In Sauce
|Skate wings||1 1⁄4 Pound|
|Mushroom soup||1⁄2 Can (5 oz)|
|Concentrated tomato juice||2 Tablespoon|
|Sour cream||3 Tablespoon (creme fraiche)|
Rinse the skate wings under plenty of cold running water and dry carefully.
Prick with a fork and arrange, side by side in a dish.
Cover and microwave on HIGH for 5 minutes.
Mix together the cream of mushroom soup, concentrated tomato juice, cognac and 1/4 cup (3 tablespoons) of water in a bowl.
Heat for 3 minutes on HIGH.
Drain the skate wings and return to the dish.
Add the sour cream (creme fraiche) to the mushroom sauce, coat the skate wings and reheat for 2 minutes on MEDIUM.
