Basic Custard Sauce
|Milk||2 1⁄4 Cup (36 tbs)|
Heat the milk in a large bowl, in the microwave for 5 minutes on HIGH.
Put the egg yolks in a bowl, add the sugar and whisk until pale and foamy.
Pour the boiling milk over in a thin stream, whisking constantly.
Filter the custard over a bowl and microwave for 3-4 minutes on HIGH, whisking every minute: it should not actually boil, but thicken lightly.
