Lobster Sauce

Ingredients
  Lobster meat 1 Pound (Fresh)
  Brandy/Sherry 1 Tablespoon
  Flour 1 1⁄2 Tablespoon
  Butter 4 Tablespoon
  Cream 1 1⁄2 Cup (24 tbs)
  Egg yolks 3 , beaten
  Nutmeg 1⁄2 Teaspoon
  Brandy/Sherry 3 Tablespoon
Directions

Cut the lobster i n good sized pieces and mix it with 2 tablespoons of the butter, melted, and a sprinkle of brandy or sherry and let stand for 10 minutes.
Melt the rest of the butter in the top part of a double boiler, blend in the flour and add the cream.
Cook for 5 minutes and slowly pour in the beaten egg yolks.
Add the seasonings and the lobster.
When hot, add the 3 tablespoons brandy or sherry, this sauce is delicious served with noodles, rice, or to pour over boiled fish.
