Baked Beef Tongue With Barbecue Sauce

Ingredients
  Beef tongue 1 (Fresh Or Smoked)
  Flour 1⁄4 Cup (4 tbs)
  Water 1⁄4 Cup (4 tbs) (To Cover)
  Fat 2 Tablespoon
  Salt 2 Teaspoon (If Fresh Tongue Is Used)
  Barbecue sauce 2 Teaspoon
Directions

Place tongue in pan with water to cover, add salt, if fresh tongue is used, and simmer 1 hour for each pound, or until tender.
Plunge-in cold water, remove skin, and dredge with flour.
Brown in melted fat.
Place tongue in baking dish, cover with barbecue sauce (recipe on page 177) and bake in moderate oven (350 F.) for 1/2 hour.
