Brown Mushroom Sauce
|Brown sauce||2 Cup (32 tbs)|
|Dry vermouth||1⁄4 Cup (4 tbs)|
|Tomato paste||2 Tablespoon|
|Parsley sprigs||2 , chopped|
|Freshly ground black pepper||To Taste|
In work bowl chop the mushrooms, the shallots and the onion.
In a saucepan melt the butter and saute the chopped vegetables for 5 minutes.
Add the wine and cook until the mixture is almost dry.
Add the tomato paste and the parsley.
Combine it with the Brown Sauce and season with salt and freshly ground black pepper.
