Ravigote' Sauce For. Mussels Or Clams

Ingredients
  Butter 2 Tablespoon
  Flour 1 Tablespoon
  Beef consomme 1⁄2 Can (5 oz)
  Egg yolks 2 , beaten
  Mustard 1⁄2 Teaspoon
  Lemon juice 2 Tablespoon
  Scallions/Chopped green onions 6 , chopped
  Salt To Taste
  Pepper To Taste
Directions

Melt the butter and blend in the flour and slowly add the consomme.
Cook until it thickens stirring constantly.
Keep hot in the top of the double boiler until ready to serve.
Then add beaten egg yolks quickly and add the chopped scallions or onions.
