Tangy Tomato Sauce

Ingredients
  Olive oil 3 Tablespoon
  Butter 1 Tablespoon
  Onion 1 Cup (16 tbs), chopped
  Celery 1⁄2 Cup (8 tbs), chopped
  Carrot 1⁄4 Cup (4 tbs), chopped
  Garlic 2 Clove (10 gm), minced
  Tomatoes 4 Cup (64 tbs), peeled, seeded, diced (or 2 cans tomatoes)
  Dried oregano 1 Teaspoon
  Dried thyme 1⁄4 Teaspoon
  Dried basil 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Black pepper 1⁄8 Teaspoon
  Sugar 1 Teaspoon
Directions

In a large saucepan, heat oil and butter.
Saute onion, celery, carrot and garlic in oil and butter until onion is golden.
Add tomatoes, oregano, thyme, basil, salt, pepper and sugar.
Bring to a boil.
Cover.
Simmer 1 hour.
Uncover and simmer 1 hour longer.
Sauce may be stored in refrigerator 1 week or sauce may be frozen.
Makes about 4 cups.
