Cream And Onion Sauce
|White onions||1 Pound, sliced|
|Butter||1⁄2 Cup (8 tbs)|
|Rich thick cream sauce||1 Cup (16 tbs)|
|Cream||1⁄4 Cup (4 tbs)|
|Cream||1 Cup (16 tbs)|
Make the Rich Thick Cream Sauce by melting the butter in a saucepan and mixing in the flour and gradually adding the cream to make a smooth paste.
Heat slowly and cook until very thick.
Cook the onions in the butter and when they are soft mash through a sieve.
Add these to the thick cream sauce.
Season and serve over boiled or broiled fish.
