Ingredients
  Chicken 5 Pound (1 Unit)
  Water 2 Quart
  Soy sauce 4 Tablespoon
  Cayenne pepper 1⁄2 Teaspoon
  Pepper powder 1⁄2 Teaspoon
  Chicken fat 3 Tablespoon
Directions

Wash the chicken, put in a heavy saucepan and cover with water.
Bring to a boil and turn down the heat and simmer for 2 hours.
Remove from the water, drain and put immediately in the refrigerator.
When it is cold and just before serving cut the chicken up Chinese style: cut in half through the backbone, then into pieces 2 inches square, cutting through the bone.
Arrange on a flat dish, skin side up.
Mix the ingredients for the sauce together and heat.
Pour over chicken, stirring well.
