Light Green Sauce

The light green sauce is a pureed sauce made with fresh veggies like lettuce, zucchini, and green onions along with parsley. Processed with cheese, and seasoned, the light green sauce is flavored with lemon juice. Fresh and tangy, I like to serve this sauce with almost anything. you can try it with plain cooked rice too!
|Finely chopped lettuce||1 Cup (16 tbs)|
|Zucchini||1 Large, peel of zucchini|
|Parsley sprigs||1⁄4 Cup (4 tbs), stems removed|
|Chopped green onion||1 Tablespoon|
|Low fat ricotta cheese||2⁄3 Cup (10.67 tbs)|
|Freshly ground white pepper||1⁄8 Teaspoon|
|Fresh lemon juice||2 Teaspoon|
|Chicken stock||1⁄2 Cup (8 tbs)|
Puree all ingredients in a food processor or blender, adding amount of stock necessary for a medium sauce consistency.
Serve over hot or cold vegetables, poached fish, or chicken.
