Chicken With Hoisin Sauce

Ingredients
  Chicken breast halves 4 , boned, skinned, and cut into 0.75 inch cubes
  Cornstarch 1 Tablespoon
  Dry sherry 1 Tablespoon
  Soy sauce 1 Tablespoon
  Green pepper 1 , cut into 0.5 inch squares
  Vegetable oil 1 Tablespoon
  Mushrooms 1⁄2 Pound, cut into 0.5 inch cubes
  Hoisin sauce 2 1⁄2 Tablespoon
  Cashews 1⁄4 Cup (4 tbs)
Directions

Sprinkle the cubed chicken with cornstarch, dry sherry, and soy sauce.
Toss to coat well and set aside.
Stirfry the green pepper in the oil for 1 minute.
Push aside.
Add mushrooms.
Stirfry for 1 to 2 minutes.
Push aside.
Stirfry chicken 2 to 3 minutes, until done.
Add hoisin sauce and cashews.
Reheat and stir briefly.
Serve at once.
