Lentils In Tomato Sauce

Ingredients
  Chicken broth/Vegetable broth / water / wine 1⁄4 Cup (4 tbs)
  Garlic 4 Clove (20 gm), minced
  Fresh tomatoes/Low-sodium canned tomatoes 2 Cup (32 tbs), chopped and drained
  Lentils 1 Cup (16 tbs), rinsed
  Water 2 1⁄2 Cup (40 tbs)
  Lemon juice 1 Tablespoon
Directions

1. Heat the broth, water, or wine in a skillet and saute the garlic over medium heat for 2 minutes.
2. Add the tomatoes and cook, stirring, for 5 minutes.
3. Add lentils and water. Stir and bring to a boil.
4. Cover, lower heat, and simmer for 30 minutes.
5. Stir in lemon juice.
