Lentils In Tomato Sauce
|Chicken broth/Vegetable broth / water / wine||1⁄4 Cup (4 tbs)|
|Garlic||4 Clove (20 gm), minced|
|Fresh tomatoes/Low-sodium canned tomatoes||2 Cup (32 tbs), chopped and drained|
|Lentils||1 Cup (16 tbs), rinsed|
|Water||2 1⁄2 Cup (40 tbs)|
|Lemon juice||1 Tablespoon|
1. Heat the broth, water, or wine in a skillet and saute the garlic over medium heat for 2 minutes.
2. Add the tomatoes and cook, stirring, for 5 minutes.
3. Add lentils and water. Stir and bring to a boil.
4. Cover, lower heat, and simmer for 30 minutes.
5. Stir in lemon juice.
