Steamed Vegetables With Garlic-Lemon Sauce
|Sliced carrots||1 Cup (16 tbs)|
|Sliced yellow summer squash||1 1⁄2 Cup (24 tbs)|
|Broccoli florets||2 Cup (32 tbs)|
|Green beans||1 1⁄2 Cup (24 tbs), trimmed and cut into 1-inch pieces|
|Sliced red potatoes||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Black pepper||1⁄4 Teaspoon|
Bring 1 inch of water to a boil in a steamer.
Place carrots, yellow summer squash, and broccoli in a steamer basket or colander and steam, covered, for 8 minutes, or until just tender.
Remove from steamer and set aside.
Bring 1 inch of water to a boil in steamer.
Place green beans and potatoes in a steamer basket or colander, cover, and steam for 10 minutes or until just tender.
While beans and potatoes are steaming, place garlic, lemon juice, and pepper in a saucepan and simmer for 8 minutes.
Combine beans and potatoes with other vegetables and toss with garlic-lemon sauce.
Note: To save time, you can use your microwave to steam some of the vegetables while you are steaming the rest on your stovetop.
