White Sauce 2
|Unbleached all purpose flour||2 Tablespoon|
|Skim milk||3⁄4 Cup (12 tbs)|
|Non fat chicken broth||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Teaspoon|
|White pepper||1 Pinch|
Place flour and milk in a saucepan.
Stir flour into milk until well blended into a smooth paste.
Place saucepan over low heat.
Add chicken broth, lemon juice, salt, white pepper, and paprika.
Stir constantly until sauce has thickened.
Variations : Add 1/2 teaspoon curry powder. Increase flour to 4 tablespoons.
Increase milk to 1 1/2 cups.
Increase chicken broth to 1/2 cup.
Add 1/4 teaspoon dry mustard and delete paprika.
Add 1/2 cup chopped mushrooms in Step 2.
