Ingredients
  Sirloin tip/Cross rib roast 4 Pound
  Garlic 3 Clove (15 gm)
  Minced shallots 1⁄2 Cup (8 tbs)
  Butter 1 Tablespoon
  Dry red wine 3⁄4 Cup (12 tbs)
  Beef stock 3⁄4 Cup (12 tbs)
  Minced parsley 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Season meat with salt and pepper to taste and stud with split, peeled garlic cloves.
Roast in a 325° oven until meat thermometer registers rare.
Reserve drippings and skim fat.
Meanwhile saute shallots in 1 teaspoon of the butter until glazed.
Add wine and stock and cook down until reduced by half.
Stir in remaining drippings, butter, and parsley.
Slice meat and spoon a little sauce over each serving.
Contains about 275 calories per serving.
