Roast with Shallot Sauce
|Sirloin tip/Cross rib roast||4 Pound|
|Garlic||3 Clove (15 gm)|
|Minced shallots||1⁄2 Cup (8 tbs)|
|Dry red wine||3⁄4 Cup (12 tbs)|
|Beef stock||3⁄4 Cup (12 tbs)|
|Minced parsley||2 Tablespoon|
Season meat with salt and pepper to taste and stud with split, peeled garlic cloves.
Roast in a 325Â° oven until meat thermometer registers rare.
Reserve drippings and skim fat.
Meanwhile saute shallots in 1 teaspoon of the butter until glazed.
Add wine and stock and cook down until reduced by half.
Stir in remaining drippings, butter, and parsley.
Slice meat and spoon a little sauce over each serving.
