Peach Sauce

Ingredients
  Water 2 Cup (32 tbs)
  Sugar 1 Cup (16 tbs)
  Lemon rind strip 2
  Lemon 1⁄2 , juiced
  Ripe peaches/0.5 pound dried peaches soaked overnight in water 6 Pound
Directions

Make a syrup by combining the sugar and water.
Add the lemon juice and rind.
Simmer the peaches in the syrup for 10 minutes.
Remove the peaches and press through a sieve or blender, adding a little of the syrup in which the peaches were poached to correct the consistency of the sauce.
