|Lemon rind strip||2|

|Ripe peaches/0.5 pound dried peaches soaked overnight in water||6 Pound|
Make a syrup by combining the sugar and water.
Add the lemon juice and rind.
Simmer the peaches in the syrup for 10 minutes.
Remove the peaches and press through a sieve or blender, adding a little of the syrup in which the peaches were poached to correct the consistency of the sauce.
