Mushroom Tomato Sauce

Ingredients
  Onions 4 , chopped
  Garlic cloves 3 Small, minced
  Oil 3 Tablespoon
  Canned tomatoes 112 Ounce
  Canned tomato paste 24 Ounce
  Mushrooms 1⁄2 Pound, sliced
  Chopped parsley/1/3 cup dried parsley flakes 1 Cup (16 tbs)
  Sugar 3 Tablespoon
  Salt 1 1⁄2 Tablespoon
  Oregano 4 Teaspoon
  Bay leaves 2
  Red wine 4 Ounce
Directions

Saute onions and garlic in oil until limp.
Add remaining ingredients and simmer for 2 to 3 1/2 hours.
Let cool to room temperature.
May be frozen in pints and quarts & used for veal parmigiana, manicotti and other Italian dishes.
