Simple Tomato Sauce
|Water/Nonfat chicken broth / vegetable broth / wine||1⁄4 Cup (4 tbs)|
|Onion||1 Medium, chopped|
|Garlic||2 Clove (10 gm), minced|
|Chopped red bell pepper||1⁄4 Cup (4 tbs)|
|Chopped tomatoes||2 Cup (32 tbs), drained|
|Dried thyme leaves||1⁄2 Teaspoon|
|Oregano leaves||1⁄2 Teaspoon, dried|
|Chopped fresh parsley||1⁄4 Cup (4 tbs)|
|Dried basil leaves||1⁄2 Teaspoon|
|Stalk celery||1 , finely chopped|
|Black pepper||1⁄4 Teaspoon|
|Firmly packed brown sugar||1⁄2 Teaspoon, firmly packed|
Place water, broth, or wine in a saucepan over medium heat.
Add onion, garlic, and red pepper.
Cook and stir over low heat for 5 minutes.
Add more liquid if necessary during this process.
Add the tomatoes, thyme leaves, oregano leaves, parsley, basil, and celery.
Cover and cook over low heat for 15 minutes.
Stir in pepper and brown sugar.
