Chicken In Fruit Sauce
|Chicken||2 Pound, cut into serving pieces|
|Orange juice||1 Cup (16 tbs)|
|Honey||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Tablespoon|
|Curry powder||1⁄2 Teaspoon|
Season the chicken pieces with salt and pepper.
Heat shortening in cooker.
Brown the chicken on all sides.
Add orange juice honey, lemon juice, and curry powder.
Close cover of cooker and set pressure regulator in place.
When pressure is reached, cook for 15 minutes.
Let pressure drop of its own accord.
Remove chicken from cooker and arrange in baking dish.
Surround with your choice of fruit peaches, pears, apricots, etc.
Pour sauce over the chicken and fruit and put under the broiler for 5 minutes or until fruit is hot.
