Chicken In Peanut Sauce
|Chicken||3 Pound, cut into serving pieces|
|Onion||1 Large, sliced|
|Tomatoes||3 , chopped|
|Tomato paste||1⁄4 Cup (4 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Chunky peanut butter||1⁄2 Cup (8 tbs)|
In the cooker, brown chicken and onion in shortening.
Add tomatoes, tomato paste, salt, pepper, and water.
Close cover and put pressure regulator in place.
When pressure is reached, cook for 15 minutes.
Allow pressure to drop normally.
Remove some of the hot liquid from the chicken and mix with the chunky peanut butter.
Pour this sauce over the chicken.
Simmer and stir for 2 minutes.
