Ham Croquettes With Cheese Sauce

Ingredients
  Butter/Margarine 3 Tablespoon
  Curry powder 1⁄2 Teaspoon
  All purpose flour 1⁄4 Cup (4 tbs)
  Milk 3⁄4 Cup (12 tbs)
  Prepared mustard 2 Teaspoon
  Onion 1 Teaspoon, grated
  Cooked ham 2 Cup (32 tbs), coarsely ground
  Dry bread crumbs 2⁄3 Cup (10.67 tbs)
  Egg 1 , beaten
  Water 2 Tablespoon (For Frying)
  Cheese sauce 1 Cup (16 tbs)
  Shortening/Cooking oil 1 Cup (16 tbs) (For Deep Frying)
Directions

Melt butter or margarine with curry powder; stir in flour.
Add milk all at once; cook and stir till bubbly.
Cook and stir 2 minutes more.
Remove from heat.
Stir in mustard and onion.
Add ground ham; mix well.
Cover and chill thoroughly.
With wet hands shape mixture into 10 balls.
Roll in bread crumbs; shape each ball into a cone.
Dip into mixture of egg and water; roll again in crumbs.
Fry, a few at a time, in deep hot fat (365°) for 2 to 2 1/2 minutes or till golden brown.
Drain; keep warm.
Serve with cheese sauce.
Cheese sauce:
In saucepan melt 2 tablespoons buffer or margarine.
Stir in 2 tablespoons all-purpose flour, 1/4 tea spoon salt, and dash pepper.
Add 1 1/4 cups milk all at once.
Cook and stir till thickened and bubbly.
Cook and stir 2 minutes more.
Add 1/2 cup shredded american cheese and 1/2 cup shredded swiss cheese; heat and stir till melted.
