Broccoli & Orange Butter Sauce

Ingredients
  Broccoli 500 Gram (1 Pound)
  Orange juice 4 Tablespoon
  Tarragon vinegar 1 Tablespoon
  Unsalted butter 125 Gram (4 Ounce)
  Vegetable stock 3 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1 Cut the broccoli into florets and steam or cook in boiling salted water until just tender, about 7-10 minutes; drain.
2 Meanwhile make the sauce. Place the orange juice, vinegar, salt and pepper in a small pan. Bring to the boil and boil rapidly until reduced to 1 tablespoon.
3 Remove from the heat and whisk in the butter, a piece at a time, until a smooth creamy sauce is formed. If the sauce becomes too thick, whisk very briefly over the heat.
4 Gradually whisk in enough stock to yield a pouring consistency. Pour the sauce over the broccoli and garnish with orange shreds.
