Red Chilli Sauce

Wash and clean scallion or spring onions.
Use only white part.
Cut in quarter inch pieces - about 1 cup.
Mix 2 tablespoons dry red chilli powder with 4 tablespoons sesame oil in a bowl.
Heat in a pan 1 1/2 cups sesame oil till it smokes, pour it while hot over the chilli paste.
Stir well till the oil becomes dark red.
You may increase or decrease the chilli powder according to taste.
If you increase the chilli powder, then also increase the volume of the oil.
Mix chilli oil with cut scallion or spring onions, 2 tablespoons soya sauce, 1 teaspoon gourmet powder or five spice powder.
Use as dressing.
Can also be used for enhancing the flavour of meat or fish dishes.
