Stuffed Flounder In Shrimp Sauce
|Whole flounder||4 Small|
|Button mushrooms||3⁄4 Cup (12 tbs)|
|White bread slices||3|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Milk||2 Cup (32 tbs)|
|Lemon rind||1 Teaspoon|
|Peeled shrimp||1⁄4 Pound|
Make a cut down the center of one side of each fish.
Chop the onion finely .
Chop the mushrooms .
Melt the butter and cook the onion and mushrooms gently, stirringwell, for5 minutes.
Discard the crusts and make the bread into fine crumbs .
Add the onion mixture to the crumbs, and season well.
Insert this stuffing into the cuts in the fish, then place the fish on a greased ovenproof dish, and bake at 400Â°F for 20 minutes.
To make the sauce, blend the butter, flour and milk.
Heat and stir over low heat until the sauce is thick and creamy.
Add the lemon juice, then season to taste.
Chop the shrimp coarsely .
Add to the sauce and heat through.
Pour over the fish and continue baking for 15 minutes.
Chop the parsley finely and mix with grated lemon rind.
Just before serving, sprinkle the parsley and lemon over the fish.
