Eggplant Sauce

Ingredients
  Eggplant 1 Medium
  Bacon fat/Oil 30 Milliliter
  Garlic clove 1 Large
  Green pepper 1 Large
  Sweet basil 5 Milliliter
  Canned tomatoes 540 Milliliter
  Salt 5 Milliliter
  Pepper 1 Milliliter
  Sugar 5 Milliliter
  Elbow macaroni 750 Milliliter
Directions

Soak the eggplant in cold water for 10 minutes, then drain it thoroughly.
Place the bacon fet or oil in a microwave-safe dish.
Microwave 2 minutes at HIGH.
Add the garlic, green pepper and basil.
Microwave 3 minutes at MEDIUM-HIGH, stir.
Add the tomatoes, salt, pepper and sugar, stir.
Add the well-drained eggplant.
Stir.
Microwave 10 minutes at MEDIUM-HIGH.
Add the elbow macaroni.
Microwave according to instructions in the Pasta Cooking Chart.
Serve with a bowl of grated cheese of your choice.
