White Vermouth Sauce

Ingredients
  Vegetable oil 2 Tablespoon, 30 ml
  Onion 1 Medium
  French shallot 1
  Flour 1 Tablespoon, 15 ml
  Tomato paste 2 Teaspoon, 10 ml
  Dry white vermouth 1⁄3 Cup (5.33 tbs), 80 ml
  Beef broth 1 Cup (16 tbs), 250 ml
  Lemon juice 1 Tablespoon, 15 ml
  Sugar 1⁄4 Teaspoon, 1 ml
  Salt To Taste
  Pepper To Taste
Directions

Heat the oil in a 4-cup(l L) microwave-safe bowl, 1 minute at HIGH.
Add the onion and shallot, mix well and micro wave 2 minutes at HIGH.
Stir in the flour and tomato paste, mix well.
Add the vermouth and beef broth.
Beat with a wire whisk.
Microwave 4 minutes at MEDIUM-HIGH, stirring halfway through the cooking.
Add the lemon juice and the sugar, beat well and microwave 2 minutes at HIGH.
Salt and pepper to taste.
Serve.
This sauce reheats very well at MEDIUM-HIGH.
