White Vermouth Sauce
|Vegetable oil||2 Tablespoon, 30 ml|
|Flour||1 Tablespoon, 15 ml|
|Tomato paste||2 Teaspoon, 10 ml|
|Dry white vermouth||1⁄3 Cup (5.33 tbs), 80 ml|
|Beef broth||1 Cup (16 tbs), 250 ml|
|Lemon juice||1 Tablespoon, 15 ml|
|Sugar||1⁄4 Teaspoon, 1 ml|
Heat the oil in a 4-cup(l L) microwave-safe bowl, 1 minute at HIGH.
Add the onion and shallot, mix well and micro wave 2 minutes at HIGH.
Stir in the flour and tomato paste, mix well.
Add the vermouth and beef broth.
Beat with a wire whisk.
Microwave 4 minutes at MEDIUM-HIGH, stirring halfway through the cooking.
Add the lemon juice and the sugar, beat well and microwave 2 minutes at HIGH.
Salt and pepper to taste.
This sauce reheats very well at MEDIUM-HIGH.
