Hot Green Sauce

Ingredients
  Finely chopped parsley 1 Tablespoon
  Finely chopped chervil 1 Tablespoon
  Finely chopped chives 1 Tablespoon
  Finely chopped tarragon 1 Tablespoon
  Finely chopped watercress 1 Tablespoon
  Finely chopped sorrel 1 Tablespoon (Optional)
  Finely chopped shallots 1 Tablespoon (Optional)
Directions

Cook these 5 or 7 tablespoonfuls for 5 minutes in boiling water.
Dry on a doth, then press through a sieve (or food mill), to produce a sort of green paste.
This you stir into a basic white sauce made, preferably, with stock and white wine
