Classic Chili Sauce

Ingredients
  Chopped tomatoes 8 Cup (128 tbs)
  Chopped onion 1 1⁄2 Cup (24 tbs)
  Chopped sweet red pepper 1 1⁄2 Cup (24 tbs)
  Chopped green pepper 1 Cup (16 tbs)
  White vinegar 1 1⁄2 Cup (24 tbs)
  Chopped celery 1 Cup (16 tbs)
  Granulated sugar 3⁄4 Cup (12 tbs)
  Hot pepper 1 Tablespoon
  Garlic 1 Clove (5 gm)
  Salt 1 Teaspoon
  Mustard seeds 1 Teaspoon
  Celery seeds 1⁄2 Teaspoon
  Ground cloves 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Ginger 1⁄4 Teaspoon
Directions

In large heavy no aluminum saucepan, combine tomatoes, onions, red and green peppers, vinegar, celery, sugar, hot pepper, garlic, salt, mustard seeds, celery seeds, cloves, cinnamon, ginger, black and cayenne peppers.
Bring to boil, stirring frequently; reduce heat and simmer briskly, stirring frequently, for about 1 hour or until thickened.
Taste and add up to 1/4 cup (50 mL) more sugar and a little more cayenne if desired.
Fill and seal canning jars; process in boiling water bath for 10 minutes.
