Make a basic white sauce with stock and white wine: simmer in it for 20 minutes on a gentle heat 3 oz.
of mushrooms, sliced but not peeled.
Beat in some butter before serving.
When you add the butter at the last moment, you could also stir in some mixed herbs, mainly chives: or a few capers.
