Ebi Chili

  Prawns 280 Gram, peeled (12 black tiger prawns)
  Salt 1⁄2 Teaspoon
  Potato starch 2 Tablespoon
  Water 2 Drop
For the seasoning
  Salt 1⁄8 Teaspoon
  Pepper 1 Pinch
  Sake 1 Teaspoon
  Egg white 1 Tablespoon
  Potato starch 1 Tablespoon
For the ebi chili sauce
  Vegetable oil 1 Tablespoon
  Ginger 1 1⁄2 Tablespoon, chopped finely
  Garlic 1 1⁄2 Tablespoon, chopped finely
  Chili bean paste 1 1⁄2 Teaspoon (Doubanjiang)
  Tomato ketchup 2 Tablespoon
  Chicken stock 100 Milliliter (Chinese style)
  Sake 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Sugar 2 Teaspoon
  Green onion 1⁄2 (Naganegi)
  Water 2 Tablespoon
  Vinegar 1⁄2 Teaspoon

1. Thinly slice the ginger and chop them into fine pieces.
2. Chop the garlic clove into fine pieces.
3. Chop the green onion into fine pieces.
4. Peel the prawns, remove the tails and devein them.
5. Make a shallow cut along the back of each prawn.
6. Add salt and potato starch to the prawns. Coat them well.
7. Add water, if required, to the prawn in order to rub the prawns with the starch properly.
8. Rinse the prawns in running water and drain them with a strainer.
9. Remove the excess water from the prawns with the help of a paper towel.

10. Take a bowl and add the prawns into it.
11. Add salt and pepper to the prawns.
12. Add sake and mix the prawns well.
13. Add egg white, potato starch to the prawns and continue to mix.
14. Take a deep saute pan and heat the vegetable oil.
15. Spread the prawns in the pan and fry them on medium heat.
16. When the prawns are turning red, flip the prawns to other side.
17. Transfer the prawn to the plate when they are completely cooked.
18. Take the same pan and heat the vegetable oil.
19. Add the chopped garlic, ginger, doubanjiang and tomato ketchup.
20. Stir fry the sauce on medium heat.
21. Add the Chinese style chicken stock, sake, salt and sugar to the sauce.
22. Bring the sauce to boil.
23. Add the fried prawns and chopped green onions to the sauce.
24. Dissolve the potato starch in water and pour it in.

25. Sprinkle vinegar in the sauce and serve ebi chili hot.
