|Chopped gherkins||1 Teaspoon|
|White mustard||1 Teaspoon|
|Olive oil||2 Cup (32 tbs)|
|Lemon juice||1 Tablespoon|
|Anchovies||2 , soaked to remove the salt.|
Make a straightforward mayonnaise , with the egg, mustard and oil.
Then add a mixture of capers, gherkins, anchovies and shallots which have been first chopped, then pounded: and last of all add the lemon juice.
