Mix butter with salt, pepper, chopped parsley and lemon juice, mashing it with a bendy knife.
In cold weather, it is easier to mix the butter if you warm the bowl a little: but the butter must not be melted.
Note: The butter, which is deucious on steaks and all kinds of grills, should be ice-cold when it is laid on top of the hot meat.
