Grilled Rib Steak With Seared Scallops In Clam Sauce

1)Season the steak lightly with the seasoning mix
2) Also season the scallops lightly with salt and the seasoning mix and keep aside
3) Place the steak onto the grill and sear the steak for about 4 minutes on each side
4) Meanwhile place a cast iron pan onto another grill to get going the clam sauce
5) Add the butter and allow it to melt in the pan
6) Tip in the chopped shallot and sweat in the butter
7) Add in the clove of crushed garlic and sauté for a minute
8) Keep an eye on the steak and allow to smoke for about 30 minutes till done
9) Once the steak is done, allow to rest for about 10 minutes
10) Add in the lemon juice and white wine to the cast iron and then add in the whole clams
11) Steam the clams till they open up
12) Once the clams have opened up, add the heavy cream
13) Tip in the chopped baby clams and cook gently
14) Into another cast iron pan over the grill, dab in some butter
15) Once the butter is melted, sear the scallops into it
16) Sear each side for about 2 minutes
17) Flip them over to the other side and brown the other side
18) Once they are seared take them off the heat

19) Serve the steak, seared scallops and clams sauce all onto a large platter
