Amy's Spicy Stir Fry with Peanut Sauce

Ingredients
For sauce
  Peanut butter 1⁄2 Cup (8 tbs)
  Warm water 1⁄2 Cup (8 tbs)
  Tamari 3⁄8 Cup (6 tbs)
  Rice wine vinegar 1⁄4 Cup (4 tbs)
  Toasted sesame oil 1⁄2 Cup (8 tbs)
  Raw peanuts/Cashews 1⁄2 Cup (8 tbs)
For stir fry
  Raw chicken 1 Pound, boned
  Tofu 1 Pound, cubed
  Crushed red pepper 1 Teaspoon
  Tamari 2 Tablespoon
  Broccoli florets 4 Cup (64 tbs)
  Carrots 3 , thinly sliced
  Toasted sesame oil 2 Tablespoon
  Crushed red pepper 1 Tablespoon
  Onion 1 Large, chopped
  Garlic 4 Clove (20 gm), crushed
  Mung bean sprouts 3 Cup (48 tbs)
  Bananas 2 , sliced to make 1/4 cup
  Dried unsweetened coconut 2 Tablespoon (adjust quantity as needed)
  Soba noodles 2 Pound
Directions

MAKING
1. Blend water, vinegar, peanut butter, red pepper, sesami oil, butter and tamari. Keep it aside.
2. Prepare the rest of ingredients for stir frying.
3. Boil water and cook noodles.
4. In a deep frying pan add 1/4 cup sesame oil and heat. Add tofu, tamari, chicken and pepper.
5. Stir fry till the chicken and nuts turn brown.
6. Keep it aside when chicken is brown.
7. Add rest of the oil.
8. Mix broccoli and carrots. Cook 2 more minutes.
9. Add garlic and onion. Cook 5 minutes more till the onions are transclucent.
10. Add sprouts, chicken, sliced banana and nuts.

SERVING
11. Serve Amy'S Spicy Stir Fry With Peanut Sauce on soba noodles with coconut.
