Peanut Sauce

Ingredients
  Shredded coconut 1⁄2 Cup (8 tbs)
  Hot milk 3⁄4 Cup (12 tbs)
  Butter 2 Tablespoon
  Onion 1 , finely chopped
  Minced ginger root 1⁄2 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Crushed pineapple 1⁄2 Cup (8 tbs)
  Peanut butter 3 Tablespoon, crunchy
  Sugar 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Freshly ground pepper To Taste
  Curry powder 1⁄2 Teaspoon
Directions

MAKING
1. In a bowl, addshredded coconut to hot milk and soak it for 30 minutes
2. In a skillet, heat the butter, then add curry powder and cook, stir for 1 to 2 minutes
3. In a skillet, add onion, gingerroot and garlic and saute for 5 minutes, stri in shredded coconut and milk and remaining ingredeints
4. Finally cook the mixture for 20 minutes, covered and stir well

SERVING
5. Serve warm, with salads or any kind of meat
