Grilled Breast Of Chicken With Tomato Butter Sauce

Ingredients
  Boneless skinless chicken breasts 4
For marinade
  White wine 1⁄4 Cup (4 tbs)
  Walnut oil 1⁄4 Cup (4 tbs)
  Vegetable oil 1⁄4 Cup (4 tbs)
  Chopped fresh tarragon 2 Tablespoon
  Lemon juice 1⁄4 Cup (4 tbs)
  Lemon rind 1 , grated
  Chopped walnuts 1⁄4
  Black peppercorns 8 , ground
  Bay leaf 1
  Garlic 1 Clove (5 gm), pressed
  Soy sauce 4 Tablespoon
For sauce
  Olive oil 1 Tablespoon
  Ripe tomatoes 22 , blanched,peeled,cored and seeded
  Pesto 2 Tablespoon
  Salt To Taste
  Pepper To Taste
  Butter 1 Pound, softened
  Fresh basil leaves 1 Tablespoon (For Garnish)
Directions

GETTING READY
1) Tak e the chicken,place in a dish, add all the marinade ingredients.
Refrigerate for 24 hours.

MAKING
2)Ready a charcoal grill and place chicken on it. Once grilled ,keep aside.
3)To make the sauce,take a large pan.Add the oil.
4)Now saute the tomatoes. Add salt,pepper and pesto.
5)Cook the tomatoes till the liquid evaporates.
6)Take a blender,puree the mixture.
7)Strain the mixture and pour back into the saucepan.
8)Now heat the butter and whisk in slowly till it completely blends in.
9)Check seasoning.

SERVING
10)Ladle the sauce on a serving plate,place the chicken on top and garnish with basil.
